Beerakaya Chutney

Today I will be presenting before you Beerakaya / Ridge gourd recipes. Ridge gourd is one thing of which we can make full use even without wasting its outer cover also.
Lets see how we make it.
a) Beerakaya Pachadi-
Ingredients:
- Ridge gourd outer peel of 2 Beerakaya
- Methi / Fenugreek seeds - 1 spoon
- Jeera - 1-2 spoon
- Hing/ Asoefatida
- Oil - 3-4 spoons
- Tamarind
- Turmeric - 1 spoon
- Salt
- Sugar - 1 spoon
- Green chillies - 6
- Red chillies- 2
- Mustard seeds - 1 spoon
- Curry leaves
- Channa Dal - 1 spoon
- Urad Dal- 1 spoon
Steps- 1. Heat 2 spoons of oil in a pan, add methi seeds, Jeera, Hing. Allow Jeera to splutter.
2. Now add green chillies, and outer cover of ridge gourd and let it fry for around 5 mins. Cool it.
3. Grind this to a paste with tamarind, sugar, salt, turmeric and water (if required)
4. Again heat remaining oil ( 2 spoons) in a pan, add channa dal, Urad dal, mustard seeds. Allow it to
splutter. Now add red chilles and curry leaves. Mix with the chutney.
Beerakaya chutney can be eaten along with idli, dosa and even with rice.
